Cottage cheese pancakes with fruit sauce TM6 TM5 (polish recipe cookido)

Ingredients
85g quick or mountain oats
200g cottage cheese
2 eggs
35g honey
20g butter, softened
or 20g clarified butter (ghee), plus extra for frying
1 teaspoon vanilla extract, natural
½ teaspoon baking powder
1 pinch salt
250g mixed frozen berries, thawed
30-50g erythritol (see tip)
or 30-50g xylitol
20g lemon juice, freshly squeezed
1 banana, sliced, for serving

 

Pour oat flakes into a clean and dry mixing bowl, grind 30 sec/speed 10. Use a spatula to scrape the ground flakes from the sides to the bottom of the mixing bowl.

Add cottage cheese, eggs, honey, butter, vanilla extract, baking powder and salt, mix 20 sec//speed 4. Transfer to another bowl, set aside for approx. 5 min. Wash the mixing bowl.

Put the fruit into the mixing bowl, add erythritol and lemon juice, mix 15 sec/speed 7. Use a spatula to scrape the ingredients from the sides to the bottom of the mixing bowl, heat 10 min/70°C/speed 2. Meanwhile, heat a small amount of butter in a non-stick pan over medium heat. Spoon portions of the dough into small pancakes (Ø 8 cm). Fry for approx. 2 min on each side. Strain the berry sauce through a fine-meshed sieve. Serve the cottage cheese pancakes with banana slices, topped with the fruit sauce.
